  • 2 tablespoons olive oil

  • 1 teaspoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • ½ cup corn kernels
  • ¼ cup red onion, diced

Instructions

  1. Prepare the cilantro lime mixture – In a small bowl, combine chopped cilantro, lime juice, lime zest, minced garlic, and one tablespoon of olive oil. Stir everything together until fragrant. This mixture will add the signature freshness to the dish.
  2. Season the steak – Pat the flank steak dry with paper towels. Sprinkle chili powder, cumin, paprika, salt, and black pepper evenly over both sides. Let it rest for about 10 minutes so the flavors absorb into the meat.
  3. Cook the steak – Heat a large skillet over medium-high heat with the remaining olive oil. Place the steak in the hot pan and cook for about 4–5 minutes per side, depending on thickness. You want a nice golden crust while keeping the inside tender.

  6. Assemble the bowls – Divide the rice into serving bowls. Add sliced steak on top, then arrange tomatoes, avocado slices, corn, and red onion around the bowl. Drizzle the remaining cilantro lime mixture over everything.
