Instructions
- Cream butter and sugar: In a large bowl, beat the softened butter and granulated sugar until light and fluffy. This should take about 2–3 minutes with a hand mixer. You’re looking for a pale, creamy mixture that holds air and makes your cookies tender.
- Add the wet ingredients: Crack in the eggs one at a time, beating well after each addition. Stir in the vanilla extract and sprinkle in the instant coffee. The coffee will dissolve into the mix, infusing it with a deep, roasted aroma.
- Combine the dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Slowly add the dry ingredients to the wet ingredients, mixing on low just until combined. Be careful not to overmix—you want tender cookies, not tough ones.
- Chill the dough: Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 30 minutes. This step helps the flavors develop and keeps the cookies from spreading too much when baked.
- Shape and coat: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Scoop out tablespoon-sized portions of dough and roll them into balls. Roll each dough ball in granulated sugar and place them a few inches apart on the prepared baking sheet.
- Bake: Bake for 8–10 minutes, or until the edges are set and just turning golden. The centers may look slightly underdone—that’s perfect. They’ll continue to cook slightly as they cool.
- Cool and enjoy: Let the cookies rest on the baking sheet for 2 minutes before transferring to a wire rack. Once cooled, store in an airtight container or enjoy warm with your favorite hot drink.
