Description

Delicious cherry butter bars, perfect for any occasion!


Ingredients

  • 3/4 cup unsalted butter (1 1/2 sticks, softened)
  • 3/4 cup granulated sugar
  • 3 tablespoons powdered sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups + 2 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter (2 sticks, softened)
  • 34 cups confectioner’s sugar (sifted)
  • Pinch of salt
  • 2 teaspoons cherry extract or vanilla extract (can also use maraschino cherry juice 23 tablespoons)
  • 23 tablespoons almond milk or cream
  • 12 drops pink food gel
  • sprinkles

Instructions

  1. Preheat oven to 375°F. Grease or line a 9×13-inch pan with parchment paper.
  2. Cream butter, granulated sugar, and powdered sugar until light and fluffy. Beat in eggs and vanilla.
  3. Mix in flour, baking powder, and salt until combined.
  4. Press dough evenly into the pan and bake for 12–15 minutes, checking at 12 minutes. The center will look slightly underbaked. Cool completely before frosting.
  5. Cream butter until fluffy, then gradually mix in powdered sugar (½ cup at a time).
  6. Add cherry extract, salt, and milk or cream as needed to achieve a light, fluffy consistency.
  7. Optional: Add food coloring and sprinkles for decoration.

Notes

  • Let the bars cool completely before frosting to ensure the frosting sets properly.
  • For a deeper cherry flavor, consider using maraschino cherry juice in the frosting.
  • These bars can be stored in an airtight container for up to a week.
