Description

Delicious mermaid-themed cookie bars adorned with colorful toppings resembling fish scales.


Ingredients

Scale
  • 1/2 cup unsalted butter, softened (1 stick)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, lightly packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup white chocolate chips, optional
  • 1/2 cup butter, softened
  • 34 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 34 tablespoons milk
  • Food coloring or gel – purple (blue, pink, or green are good option colors)
  • Pastel m&m’s (sprinkles, sugars of choice that are Mermaid inspired colored)

Instructions

  1. Preheat oven to 350 degrees. Line a 9 x 13 inch baking dish with parchment paper or spray with nonstick cooking spray and set aside.
  2. In a large bowl, beat together 1 stick of softened butter, brown sugar, and white granulated sugar with an electric mixer until light and fluffy for about 3-5 minutes. Beat in the eggs and vanilla until smooth.
  3. In a small bowl, sift together the flour, baking soda, baking powder, and salt. Gradually add dry ingredients to the batter a little at a time, beating over low speed. Add chocolate chips if desired.
  4. Evenly spread the batter into the prepared baking pan. Bake in the preheated oven for 20 minutes, or until edges are golden brown. Remove from the oven and allow to cool completely before frosting.
  5. Stir all ingredients together until smooth and fluffy. Start by adding 3 tablespoons milk and work up from there until frosting is the desired consistency.
  6. Spread over cooled cookie bars.
  7. Place m&m’s on top of cookie bars, to resemble scales like on a fish and add color-friendly sprinkles and sugars as desired. Cut into bars and serve.

Notes

  • Experiment with different food colorings to achieve your desired mermaid look.
