Description
A refreshing raspberry lime drink that combines tartness from fresh limes and sweetness from raspberries, perfect for hot days.

- 1/2 cup fresh raspberries
- 1–2 fresh limes (for juice, plus extra for garnish)
- 1–2 tablespoons simple syrup or granulated sugar
- 3/4 to 1 cup sparkling water (or club soda/seltzer)
- Mint leaves (for garnish, optional)
- Extra fruit (whole raspberries or lime wheel for garnish, optional)
Instructions
- Start by gently washing about half a cup of fresh raspberries. If you’re using frozen, make sure they are fully thawed. Place them in a sturdy glass or a small mixing bowl.
- Using a muddler (or the back of a wooden spoon), gently press down on the raspberries. You want to break them down and release their juices and vibrant color, but avoid over-muddling to prevent bitter notes from the seeds.
- Squeeze the juice from one fresh lime directly over the muddled raspberries. Add about 1-2 tablespoons of simple syrup (or granulated sugar), adjusting to your preferred level of sweetness. Give it a gentle stir to combine.
- For a super smooth fizz without seeds, I recommend straining the raspberry-lime mixture. Place a fine-mesh sieve over your serving glass and pour the muddled mixture through it, pressing gently on the solids with the back of a spoon to extract all the delicious juice. Discard the remaining pulp and seeds.
- Fill your serving glass (or pitcher if making a batch) generously with ice.
- Slowly pour about 3/4 to 1 cup of chilled sparkling water over the ice and raspberry-lime mixture.
- Give your drink a gentle stir with a spoon to fully incorporate all the flavors. Garnish with a fresh lime wheel, a few whole raspberries, and a sprig of fresh mint. Serve immediately and enjoy.

- Adjust sweetness by adding more or less simple syrup or sugar according to your taste.
- Using chilled sparkling water will enhance the refreshing quality of the drink.
