Description

This delicious honey-glazed salmon dish features fresh fennel and a vibrant citrus marinade for a light and healthy meal.


Ingredients

  • 4 filets Salmon
  • 2 tablespoons Honey
  • 1 large Blood Orange
  • 1 large Lemon
  • 1/4 cup Orange Juice
  • 2 tablespoons Lemon Juice
  • 1 bulb Fennel
  • 1 tablespoon Fresh Thyme
  • 1 medium Red Chile or Serrano Chile
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Chili Powder
  • 1 teaspoon Cumin

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with non-stick spray.
  2. In a medium bowl, whisk together honey, orange juice, lemon juice, chili powder, and cumin.
  3. Place salmon filets in a resealable bag and pour the marinade over; mix in a bowl.
  4. Add olive oil, salt, and pepper to the sliced vegetables; toss well and transfer to the baking dish.
  5. Place marinated salmon filets on top of the fennel mixture, skin side down. Brush with reserved marinade.
  6. Roast in the oven for 15-25 minutes until salmon flakes easily and is no longer translucent.
  7. Remove from oven and drizzle remaining marinade over salmon; serve immediately.

  • Choosing skin-on fillets is recommended for the best flavor and presentation.
  • Maple syrup or agave nectar can be used as a substitute for honey.
  • Meyer lemons provide a sweeter taste compared to regular lemons.
